Here’s a healthy side dish for your next cookout. I find this to be even better than the real bacon version (which I have traditionally made with a lot of bacon and the bacon grease), as it gives you more of the baconey taste without the greasy texture the bacon gives it or the extra calories or fat.
Green beans a la
Bacon Salt
· 1 tablespooon olive oil
· 1/2 onion, minced
· 1 pound green beans, trimmed
· 1-2 tablespoons Original Bacon Salt
· 1/2 cup boiling water
· 1 tablespoon unsalted butter,
softened
· 1 1/2 tablespoons white vinegar
· Freshly ground pepper
Heat olive oil. Add the onion to the
skillet and cook, stirring, until softened. Add the beans, and Original Bacon
Salt and saute over moderately high heat, stirring, for 2 minutes.
Add the boiling water and cover the
skillet immediately. Steam the beans, stirring or shaking occasionally, for 15
minutes, or until just crisp-tender. Add the butter, vinegar, and pepper and
toss until combined. Sprinkle with a bit more Bacon Salt, serve and enjoy!
