This was submitted by our vegetarian Bacontern, Jessica, who thought it sounded delicious. Turns out, she was right - if she ever wants to go carnivore, she can cook for me anytime. This was made this weekend and it was finished by only 4 people instead of 6 if that tells you anything.
Bacon-Flavored
Double Cheeseburger Meatloaf Recipe

pounds lean ground chuck or ground round

cup firm fresh white bread crumbs

cup coarsely shredded sharp Cheddar cheese (about 4 ounces)

large sweet onion, chopped
·
4
tablespoons Regular or Lite Baconnaise

2
tablespoons sweet pickle relish
·
2
teaspoons dry mustard
·
1
teaspoon any flavor Bacon Salt
·
1/2
teaspoon freshly ground pepper
·
1
egg
·
1/4
cup ketchup
Preparation:
Preheat the oven to 350 degrees F.
In a large mixing bowl, use your hands to gently but thoroughly mix together
the meat, bread crumbs, 1/2 cup of the cheese, onion, Baconnaise, relish,
mustard, Bacon Salt, pepper and egg. Pat the mixture into a shallow 2-quart
baking pan. Spread the top of the loaf with the ketchup. Bake until the
loaf is firm, 45 to 50 minutes, sprinkling the top of the loaf with the
remaining 1/2 cup cheese to melt during the last 5 to 10 minutes of
baking. Internal temperature should be 155 degrees. Let the meatloaf stand in
the baking dish for 10 minutes, then cut into squares to serve. Top with a sprinkling of additional Bacon Salt and fresh ground black pepper to taste.
Yield: 6 servings
It sounded so good I made a vegetarian version this weekend and it was also delicious! To make ths recipe vegetarian, substitute the ground round with one 14 ounce package of meatless ground round and mmm.

This recipe is kind of hilarious! I think I'm going to have to try it. This looks like one meatloaf my family might actually scarf down.
