This makes a great appetizer or an entree, and eliminates a lot of the effort involved in wrapping scallops in bacon, while infusing the entire scallop with a delicious bacon taste.
Grilled Bacon Salt Sea Scallops
- 10-15 sea scallops
- 1-2 lemons
- 2 tbsp any flavor of Bacon Salt
- 1 tsp brown sugar
- 2 tbsp olive oil (if grilling)
Grilled version: Prepare a very hot grill. Cut sea scallops in half down the middle, and toss with 1 tbsp of any
flavor of Bacon Salt (we especially like Applewood, Peppered, Jalapeno
or Original), olive oil and brown sugar. If you use Maple Bacon Salt, you can omit
the brown sugar. Place scallops directly on grill
(you can use skewers if you have them) for 3-5 minutes on each side. Remove from grill and squirt lightly with
lemon juice.
Oven version: Cut sea scallops in half down the middle, and toss with 1 tbsp of any flavor of Bacon Salt (we especially like Applewood, Peppered, Jalapeno or Original) and brown sugar. If you use Maple Bacon Salt, you can omit the brown sugar. Place scallops on baking sheet and broil in the oven for 5-6 minutes on each side. Remove from oven and squirt lightly with lemon juice. As an optional twist on this version, mostly for color and presentation, you could wrap the scallops in spinach and skewer with a toothpick before broiling.
