We made something this weekend that may have entered our personal top 5 favorite recipes with Bacon Salt. It's very simple and actually affordable to make, yet the results were amazingly good. The Peppered Bacon Salt is, as always, a great complement to the savory taste of fresh garlic.
Clam Linguine with Garlic and Peppered Bacon Salt
Linguine (or angel hair pasta or spaghetti)
3-4 tablespoons of olive oil
1/2 cup fresh chopped parsley
6-8 cloves of fresh garlic, chopped
1/2 tsp crushed red pepper flakes
1-3 lbs of fresh clams (optional - this can be done as a simple Alio-olio dish with pinenuts, and you can use fresh or even canned/drained clams if you wish)
Boil the pasta in salted water.
While the pasta is cooking in a large frying pan add the olive oil and turn heat to medium or medium-low. Once hot, sautee the garlic, Peppered Bacon Salt and crushed red pepper flakes for 2-3 minutes being careful not to burn the garlic. Add the clams and half the parsley and cook on Medium or Medium-High until the clams are all open, discarding the clams that do not open after several minutes.
Spoon the clams and olive oil mixture over the cooked drained linguine (or mix them in the frying pan), and garnish with more parsley and Peppered Bacon Salt to taste. Serve with garlic or other bread and enjoy!
