Here's an easy one that we're making for our Thanksgiving dinner tomorrow at the in-laws (we're supposed to bring the greens and I'm just getting home from the office - LOTS of orders we had to go through). We'll let you know how this turns out!
Baconnaise Broccoli Salad
- 2 bunches broccoli, florets only (5-7 cups)
- 1/2 cup raisins
- 1 red onion, chopped
- Slivered almonds, toasted (you can also brown them in a frying pan with butter)
- 10 slices cooked bacon, crumbled (optional)
- 1 cup Baconnaise
Blanch the broccoli in boiling water and let cool. Mix together all ingredients, chill and serve.
This was delicious. The one key was to blanch the broccoli for about 1.5 minutes, which made it crisp-tender and a much brighter color of green than uncooked broccoli. We also added fresh ground pepper to give it a little bite. Overall, very well received!
