Now that the whole "spinach is bad" epidemic is over - thank goodness - we can all go back to our spinach eating ways. I really like spinach salads, especially in the summer. There are lots of recipes using bacon and bacon grease, but this one is way lower fat but just as tasty.
Spinach Salad with Warm Bacon Dressing
- Bunch of fresh spinach, washed well and clipped of any tough stems (you can also buy it in the bag)
- 1/4 cup sliced almonds
- 1/2 tablespoon butter
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 cup diced red onions
- 1 clove of garlic
- 1/2 teaspoon black pepper
- 1 tablespoon dijon mustard
- 2 tablespoons sugar
- 1/2 cup dried cranberries
- 1/4 cup vegetable oil
- Feta cheese (optional)
- Original or Peppered Bacon Salt to taste (for me, usually about 1/2 tablespoon)
Sautee the sliced almonds in butter until lightly browned and set aside. Sautee the onions in olive oil and 1 teaspoon of Bacon Salt for approx. 2-3 minutes until they start to soften, then add the garlic and black pepper. Add the dijon mustard, red wine vinegar, and Bacon Salt then stir in the sugar until dissolved. Add dried cranberries and vegetable oil, and warm for 30 seconds to 1 minute over medium heat. Pour over spinach and sliced almonds. Crumble feta cheese over each salad bowl (optional).
